Gnocchi

Gnocchi is traditionally a kid favorite dish. So many ways to mix it up for a quick, healthy, & easy weeknight meal! 

Ingredients

  • 18oz gnocchi
  • 2tbs of minced garlic
  • 4oz pancetta
  • 3 cups of fresh spinach
  • 1 1/2-2 cups of tomato sauce

Instructions

  1. In a large pot bring 6quarts of water to a boil.
  2. Cook gnocchi according to package, until it floats.
  3. Drain and set aside.
  4. Meanwhile in a large pan add 1-2tbs of EVOO over medium high heat.
  5. Add garlic and cook about 1 min.
  6. Add pancetta and cook about 3 min until it starts to brown.
  7. Add spinach to the pan and mix well with pancetta and garlic until wilted.
  8. Add tomato sauce to the pan, reduce heat to low, and simmer all the flavors together about 5 min.
  9. Add gnocchi to the pan and mix well. You can add some grated Parmesan cheese if you like! Enjoy!
