Irresistible Cannoli Cookies

Cannoli Cookies, are easy Italian Christmas cookies full of flavor with ricotta cheese, chocolate chips, and pistachios and have a soft almost cake-like texture.

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup ricotta cheese
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon ground cinnamon
  • 1 teaspoon fresh orange zest
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 10 ounces mini chocolate chips, divided
  • 1 cup chopped pistachios

Instructions:

  1. In a large mixing bowl, cream together the butter and sugar with an electric mixer until light and fluffy.
  2. Blend in the eggs and ricotta cheese until well combined.
  3. Add in the vanilla extract, cinnamon, and fresh orange zest.
  4. Mix in the baking powder, baking soda, and salt.
  5. Gradually mix in the flour until just combined.
  6. Fold in 1 cup of chocolate chips and the chopped pistachios.
  7. Cover the dough and refrigerate for at least one hour.
  8. Preheat your oven to 375 degrees F (190 degrees C).
  9. Line baking sheets with parchment paper or lightly grease them.
  10. Using a medium cookie scoop or spoon, drop about 1 1/2 tablespoons of dough per cookie onto the sheets, leaving about 2 inches between each.
  11. Bake for 8-11 minutes or until golden brown around the edges.
  12. Allow to cool slightly, then transfer to wire racks to cool completely.
  13. Melt the remaining chocolate chips in a microwave-safe bowl in 20-second intervals, stirring after each until smooth.
  14. Spoon the melted chocolate into a small resealable bag, snip one corner, and drizzle over the cookies.
  15. Let the chocolate set before serving.

Tips:

For the chocolate drizzle, some brands of chocolate chips melt better than others. A semisweet or dark chocolate bar can also be a great alternative.
No need to refrigerate these cookies after baking – store them in an airtight container like your other favorite cookies.

Substitutions:

Feel free to substitute the mini chocolate chips and pistachios with your preferred baking chips and nuts.
