Mussels & Clams over Linguini

Seafood and pasta go together like peanut butter & jelly (or mom & wine)! This delicious dish is super easy, fast, and most of all economical! You can feed a family of 4 for $20! Enjoy my take on Mussels & Clams over Linguini! 

Ingredients

  • 1pkg of linguini
  • 1tbs of butter
  • 2tbs of minced garlic
  • 1/4 tsp of crushed red pepper
  • 1/4 tsp of salt
  • 1/2- 1 cup of dry white wine Juice of 1 lemon
  • 1, 10oz can of boiled clams
  • 1, 16oz bag of frozen mussels
  • 1, 16oz bag of frozen clams Optional: Italian parsley, oregano, or basil to taste.

Instructions

  1. In a large pot, bring salted water to a boil.
  2. Add pasta and a drop of EVOO so it doesn’t stick.
  3. Cook according to directions and drain.
  4. Meanwhile, in a large Dutch oven, melt butter over medium-high heat.
  5. Add garlic, crushed red pepper, salt and cook until fragrant.
  6. Add white wine and stir well. Cook about 3-5 min until wine is reduced.
  7. Add lemon juice, boiled clams and cook about 5 min.
  8. Drain frozen mussels and clams out of their bags and add to the Dutch oven.
  9. Reduce heat to medium and cover, stirring often, allowing the clams and mussels to fully open for about 5-8 min.
  10. Put cooked pasta in a large serving dish and pour seafood medley over the pasta.
  11. Top with some Italian parsley, basil, or oregano. Viola! A delicious seafood dish your whole family will love!
