V’s Alphabet Soup!

✏️BACK TO SCHOOL can be a very stressful time for both parents and kids. Making dinner while getting everything ready for the big next day shouldn’t be part of that. Here is an easy and delicious soup that will get them, and you, all ready for the new school year ahead. V’s Alphabet Soup! This uses the famous mirepoix which is the combo if onions, carrots, and celery. 

This post is dedicated to my long time friend Sarah who makes her version of “Smartie  Soup” every year! Love you girl! 

*Serves 5 

Ingredients

  • 2tbs of EVOO
  • 2tbs of minced garlic
  • 1 medium onion, chopped
  • 1 cup of carrots (about 3 whole carrots peeled), chopped
  • 1 cup of celery (about 3 stalks), chopped
  • 4 cups of veggie or chicken broth
  • 4 cups of water
  • 6oz of Alphabet Pasta
  • Salt & pepper

Instructions

  1. In a large dutch oven or stock pot, heat EVOO over medium high heat.
  2. Add garlic and cook about 1 min.
  3. Add onions and cook until translucent, about 5 min.
  4. Add carrots and cook until softened, another 5 min.
  5. Add celery and cook until softened a few minutes.
  6. Add pinches of salt and pepper as you go and mix all the ingredients well as they cook so as not to burn.
  7. Add veggie stock, water and turn heat up to high, cover, and bring to a boil.
  8. Add pasta to boiling soup and cook uncovered until tender (1 usually cook it about 10 min).
  9. Remove from heat and serve! Have a great year Smarties!
